A Traditional Loose-Leaf Method

Gongfu Brewing

An approachable introduction to Gongfu Brewing—a traditional Chinese method that uses more tea, less water, and Multiple Steeps to reveal how the flavor changes over time.

Choose a small vessel

Use a gaiwan or small teapot, approximately 100–150 mL.

Use more leaf

Begin with about 5 g of tea per 100 mL of water.

Follow the temperature guide for your tea

Brew at the Hot Brew water temperature listed on its package.

Begin with short steeps

Start with the tested range for that tea, decant fully, and add a few seconds with each steep.

Best for Loose Leaf. For Tea Sachets, use the Hot Brew or Cold Brew profile for your tea above.

Brewing questions

Can I use Wistearia Tea Sachets for Cold Brew?

Yes. Use room-temperature water. Steep for the time listed either at room temperature or refrigerated. After steeping, remove the sachet or leaves, refrigerate and enjoy within 48 hours.

Are Iced Tea and Cold Brew the same?

No. Iced Tea is brewed hot and then poured over ice. Cold Brew steeps slowly in room-temperature water without any hot water at all.

Can I steep my tea more than once?

Yes. Wistearia teas support Multiple Steeps. Later steeps may need a little more time, so adjust to taste.

Should I follow the website or the package?

The website and package should show the same instructions. If you ever see a difference, follow the current package and contact us so we can correct the discrepancy.

Why might my cup's caffeine differ from the label?

Our caffeine figures are independently lab-tested baselines, brewed under each tea's package parameters. Your actual cup can vary with tea amount, water temperature, steep time, brewing method, harvest season, and leaf age. View our caffeine guide →
